Seasonal produce, grown just nearby and carefully harvested by long-standing partners. Vegetables from La Pode, olive oil from the Moulin de la Restanque, edible flowers from Liesbet – all feed the inspiration of Thomas, a young chef both curious and committed.

The Charm of a Château Steeped in History
To wander through Château de Siran is to step into a thousand-year story. Behind a simple façade, bathed in Southern light, lies a house of character – witness to many lives and transformations – and a delicate Mediterranean garden.
In the lands of the Minervois, Siran traces its roots back to Roman Gaul. The village owes its name to one of Caesar’s generals, to whom these lands were granted.
Siran lived in autonomy for centuries, until the Cathar period. The King then reclaimed the territory, which passed into the hands of various lords.
One of them, the Bishop of Saint-Pons, built the Château upon the old ramparts, around a 13th-century house.
Rubble-stone walls, towers, vaulted ceilings: every restoration has respected the spirit of the place. Today, the Château retains the rare atmosphere of a house inhabited by time itself.
